GRILLED CORN WITH URFA BUTTER


Corn husks carry loads of flavour and it is well worth using them when cooking, even if you are simply boiling the cob in its husk. If you can’t get corn with the husks still on, wrap each cob in a sheet of baking paper and then a sheet of aluminium foil to form a little protective jacket – this will help you steam, rather than burn, the kernels at the first stage of cooking.

 

GRILLED CORN WITH HONEY & URFA CHILLI BUTTER

Allow 1 corn per person

INGREDIENTS

METHOD

To make the honey & urfa chilli butter, place a small frying pan on the BBQ, add the butter and melt it until it starts to foam. Remove from the heat, add the honey and urfa chilli, and mix well to combine. Return the pan to the heat to foam the butter again, then serve drizzled all over the corn cobs.

To grill the corn cobs. Place the whole cobs in their husks over a medium heat on the BBQ and allow them to take on plenty of colour, rotating every 3–4 minutes, until they are really charred (15 minutes in total should do the trick). Remove from the heat and set aside for 10 minutes, then pull back most of the burnt husk (or remove the paper and foil wrapper) and return to a very high-heat grill for a minute or two to char some of the flesh really quickly for a lovely smoky flavour and chewy texture. Serve straight away with the honey & urfa chilli butter.

TO COOK WITHOUT A BBQ

Use a lightly oiled, preheated griddle pan on your stove top and cook just as you would on the fire.
