This is our humble tribute to the Chelsea bun, and to the part of London that is such a happy home for us. In our more deluded moments we imagine how, 300 years from now, it’ll make Fitzrovia as famous as Chelsea, since these buns are just as good as their ancestors. A spiral of rich dough crammed full of sour cherries and pistachios, with mahleb adding an exotic twist.
We’ve included enough dough to make two batches of 6 buns. You’ll make 6 Fitzrovia buns and 6 bonus chocolate tahini buns. You can bake them all at the same time or freeze once shaped.

strong flour & salt

sugar spice mix - mahleb & brown sugar
chocolate tahini spread
You will need:
eggs x 3
mixing bowl or mixer with dough hook
Cooking and prep time: 45 mins plus 2hrs proving (or overnight proving)
